Braised Kale w/ Poached Eggs

They say that breakfast is the most important meal of the day. I’m not sure I agree that it’s the most important (with my crazy schedule, my vote is for lunch), but it’s definitely my favorite genre.

Packed with nutrients and protein, here is one of my favorite, quick, easy, and (most importantly) delicious breakfasts:

BRAISED KALE W/ POACHED EGGS
1 cup kale, torn into small pieces
2 eggs, poached
1 clove garlic, crushed
2 tbsp chicken broth
red wine vinegar
salt/pepper to taste
feta cheese (optional)

In a medium, nonstick skillet heat 1-2 tbsp oil (I usually use extra virgin olive oil) over medium heat. Add kale and sauté for 3 minutes. In the meantime, you can boil water in a small saucepan for the poached eggs.   

Stir in the chicken broth and cook until the kale has wilted. Add a splash of red wine vinegar. Salt and pepper to taste.

Transfer the kale to a plate, sprinkle with feta cheese (optional), and top with poached eggs.

Voila!
